Ultra-Processed Food Continuum (NOVA Classification)

The NOVA classification, developed by Carlos Monteiro at University of São Paulo, categorizes foods by processing level: Group 1 (unprocessed—fruits, vegetables, meat), Group 2 (culinary ingredients—oils, butter, salt), Group 3 (processed—canned vegetables, cheese, bread), and Group 4 (ultra-processed—industrial formulations with substances not used in home cooking). Ultra-processed foods now constitute 50-60% of American calories, and Kevin Hall's 2019 NIH study proved people spontaneously eat 500+ extra calories daily on ultra-processed diets versus whole-food diets, even matched for available calories, macronutrients, sugar, fat, and fiber. This is the most empirically striking finding in modern nutrition.
